All about Bread Fritters
Though it was my first attempt at making bread fritters, the output was more than satisfactory. Perhaps, because I have tried similar snacks several times before, I could make these well too. Being stuffed with bread, they tasted mushy. Bread crumbs are swathed in chickpea flour and curd, and fried. I had delicious home-made mint chutney too, so I added that too to the mixture. Trust me, the chutney made them taste divine. Some people add grated carrots too to thicken the mixture, but I kept it simple. Let me share you the recipe. Have these fritters with sauce and tea. As you can see in the picture, I picked big balls of mixture to fry and got to get huge fritters. Next time, I am going to try smaller ones. Relish with a hot cup of tea or coffee.
You can use ready-made bread crumb powder if you do not want to use bread straightaway.

A Bread crumb or breading is prepared from dry bread. In different regions of the world, it is used variably. While it is a good topping ingredient for casserole dishes, it also acts a thickening agents in stews. As used in fritters, it is used to make food crispier and tastier. They are mostly used in making cutlets. 'Panko' is a variant that is used to provide flaky texture to fried foods.Prepared from dried, baked, and roasted breads in order to make it moisture-free. The slices of bread are pulverized and the crumbs so produced have often flaky texture.
Breading, popularly known as crumbling, is a dried coating derived from dried grains and prepared from bread crumbs.
Cutlets: In India, the vegetarian cutlets are often made using boiled potatoes as stuffing. The potatoes are mashed along with salt, green chilies, coriander powder, lemon juice, and fried. Commonly called 'Cotoletta' in Italian cuisine, the cutlets are used with several variations. Milanese, the most common variant, is made in bread crumbs and butter-fried.
Half bowl chickpea flour
8-10 pieces of bread
Salt as per taste
Half a tsp. of chili powder
Half a tsp. coriander powder
Half a bowl curd
Mint chutney
Vegetable oil

Take bread 4-5 days old. Remove brown portion from all the four sides. Bread too soft would make it difficult to handle it while making balls, so it is better to take the one that has been kept for a few days. 

Crumble down bread pieces with your hands, so that you make very small pieces of them. Empty the contents in a bowl.

Add half a bowl of sour curd/yogurt to the crumbled pieces. Keep aside for about 10-15 minutes. The mixture would swell. Now add chickpea flour and 2-3 tsp. water to it. Add salt, mint chutney, coriander powder, and red chili powder. Mix all thoroughly. It may become difficult to mix the ingredients as the mixture becomes thick by this time.

Pick a portion out of the mixture prepared above and make a small ball out of it. Mixture should be thick enough so that you can easily pick it up and make a ball shape. In the similar fashion, make other balls too.

Heat vegetable oil in a skillet. When it is hot enough, pick bread ball and place it in oil. Fry it on medium flame until it is cooked from both sides. Fry other fritters likewise. You can try making 2-3 balls at once.


Place fritters over an absorbent paper so that excess oil get soaked, Serve them with mint chutney and a cup of tea. Red chili sauce can also be used.
