Lollipop Making at Home
In this lens, I am going to pen down a simple recipe of a lollipop. Remember your childhood days, when you used to feel on the top-of-the-world with some of them in your pocket? Prepare these charming candies for your children, for gifting to someone, and of course, for yourself. Use the flavor and color you like. Let's see what comes out of your efforts. In the lens, I have explained steps to make them. Try making them and tell me easy or difficult it was.
Heavenly Happiness
My childhood is long gone, but that delectable taste of these candies is still in my mouth. In those happy days, I would irritate endlessly to make my parents fetch them. And if they won't, I would just sit on the floor and cry very bitterly. Remember that endless mirth that we would get with candies in our pockets? It was such a heavenly thing. Their plentiful flavors, colors, and designs would enamor me. I never thought that they could be prepared at home until a friend of mine told me about them. I could not make them properly in my first attempt, but I have practiced them now. These candies are to be made under controlled conditions. An optimum temperature and perfect cooling time are a few things to consider.
Dum Dum Lollipop Recipe

Candy Molds
2 cups white sugar
Two-third cup corn syrup
Food colors (as per your liking)
Candy sticks
A cup of water
An oil-based flavor
Raffia strings
Wrappers (as many candies are there)
   Take candy-molds and sprinkle a flavorless vegetable spray over them.
In a skillet, add water and sugar.
Heat them over flame and mix well.
After it becomes a bit warm, add corn syrup and butter.
Bring the liquid to boil.
Simmer the flame. Keep on stirring continuously, so that no sugar remains at the bottom.
Insert a candy thermometer in the solution. This would be required to note down the temperature of the solution.
Stop stirring after all sugar has completely dissolved
As syrup temperature reaches 250-300 Fahrenheit, remove the solution from gas.
Add flavor-color. I generally prefer the cherry one. Add vegetable flavor too.
Mix well.
Keep your candy-molds all ready.
Place sticks in each one of them.
Without letting the syrup cool down, pour it into every mold.
Make sure that your sticks are placed in the center of molds.
Let the lollies cool down for half an hour
Remove them from molds.
If they do not come out easily, tap the molds. As they come out, dry them for some time. They are ready for packing now. Wrap each one of the lolly with translucent papers.
Bind them at the end with raffia strings.

Types of Lollipops: How Many Flavors and Types Have You Tried?
You must have eaten ice-candies? And tell me the name of person who has not. They are so common. But,there are some candies that have strange stuffing of items. At certain places, you will find meal-worm larvae in them. Yuck!! The more common have bubble-gum inside. In some countries, they have been rendered technology-driven. You may seen a child with candy a bright light inside. The others have machines that spin them in your mouth!! Crazy, isn't it?

You may be surprised to now that these sweet lollipops are also used in medicinal purposes. At times, they are served to carry tablets in them. A popular candy that the military men often use is known as 'Actiq'. Marketers, in past, have also popularized candies as a way of shedding extra kilos.

Lollipops owes their origin to America, yet there are no concrete evidences about its original inventor and exact place. According to some evidences, it can be said that they were known to people in the very beginning of the nineteenth century. Some others are of the view that it was not before mid of this century that these sweet lollies could see light of the day. People have been fond of this confectionery item since ages. Though there are varied views about its inventor, George Smith is credited with its first use. Talk of flavors of its Chupa Chups variety(originated from Spain), and there are far too many: Mango, banana, apple, coffee, melon, cola, coffee, vanilla, strawberry, cherry, milk, lemon coconut, pineapple, chocolate, mocha, matcha latte, salmaik, peach, orange, and so many more. At times, a combination of these flavors is also used.

Tootsie Pops are the candies that are chocolate flavored; these were first made in America by Luka R. Wesigram in 1930. Dum Sum pop version is associated with Spangler Candy Company and comes in exactly 16 flavors. Lemon was the original flavor but later, root beer, strawberry, orange, lime, grape, butterscotch, raspberry, chocolate, cheery, coconut, bubblegum, lemonade, cherry cola, and buttered popcorn were made over the course of time. A peach-mango flavor came out just last year.
Salmaik???
Salmaik is a combination of liquorice with ammonium chloride.

Swirled Lollipops: Magnificent Ones!
Swirled colorful lollipops loo so fascinating. Their multiple colors attract kids and grown-ups alike. It is a trick to make them properly. Kneading, making separate ropes for every color and then intertwining them needs perfection. Let's have a look at the recipe
Half a cup of water
Half a cup corn syrup
Two cups of sugar.
A tsp.natural flavored oil.
A food color of your choice.
A cookie pan
Candy sticks.
  To make a swirl lollipops, heat half a cup of water and half a cup corn syrup with two cups of sugar.
Add natural flavored oil.
Stir well to let the sugar dissolve.
When the required temperature is reached, shut off the gas.
Now, mix in food color.
Cover a cookie pan with wax paper and place heated mixture over it.
As it cools down, start rolling it from one side, with the help of a spatula.
When it is cold enough to be touched, knead it time and again, until you see a bright hue.
Take a portion out of it, and with your waxed hands, roll it in the form of a rope.
 Now coil the rope to form a series of concentric circles.
Don't forget to place a stick in every lollipop.
If you want a multicolored lollipop, divide the sugar syrup in two parts before adding food flavors.
Add one flavor in one part and the other flavor in the other half.
Repeat the same process with both syrups.
Prepare two candy ropes separately, and then intertwine them.
Swirl them to make a colorful circle.
Precautions while making them

Pay your full attention to making candies; don't let the diversions of the outside world disturb you.
Make them while your children are away. They could touch and harm themselves
Do not touch the syrup while it is too warm. Always oil your hands.
Do not let the microwave temperature exceed 300 Fahrenheit.

Making Chocolate Lollipops without Molds

Here is how to make them without using molds. Take some good quality seal-able plastic bags. Place chocolate bars in each one of them, and melt them in oven for 40 seconds. Don't forget to keep the mouth of the bag open an inch. This would be used for squeezing the melted chocolate onto cookie sheets. Cover every cookie sheet with a wax paper, and place candy-sticks a few inches apart from each other. Let the melted chocolate cool for some time, so that you do not have difficulty picking them. Atop every stick, draw a nice circle or heart shape by squeezing a plastic bag, and quickly fill in.

Do the same for each one of them. While they are still hot, sprinkle your favorite nuts and sprinkles over them. You can try raisins, cashew nuts, cardamom, and other things too. Refrigerate the candies for half an hour. Have fun!! Experiment with the design by making neat swirls while squeezing the chocolate onto sticks. Begin from one end and start drawing smaller to bigger circles around it. For making swirl candies, the chocolate bars need to tempered first before they are melted. You can also melt by keeping them in warm water. Keep the chocolates covered while you put the bars in warm water. If you use white chocolate, melting with water is the only option.
