Namkeen Matars Recipe


'Crunchy Namkeen Matar' is a very popular Indian snack. Devoured with tea or coffee, this snack has remained my all-time favorite for years. And I never get satiated with only a handful of them. Once I have hands on them, I do not stop! Made with 'maida', the bleached and refined wheat flour, this snack is very common to Indian households. Once here, you will see it over sweetmeat shops. 'Namkeen Matar' means salty peas. These are called peas, as they resemble green peas in shape.
A cup maida (Refined wheat flour)
250 g wheat flour
1 tsp carom seeds
Salt to taste
Refined oil
  In a bowl, add maida and wheat flour
Add salt and carom seeds.
Start kneading the flours by adding water, slowly.
Keep on kneading until the flours are collected into a mass and are soft enough to roll.
Take a chunk of the kneaded flour and make a tennis-size ball out of it
With a rolling pin, roll out the ball, to make a circle.
With a knife, cut vertical stripes out of the circle.
Do the same for the remaining dough.
Heat oil in a skillet.
When it is hot enough, place the stripes (few at a time) in it.
Let the 'matars' fry till they become golden brown.

Serve with sauce and tea.
