A Scallion Pancake Recipe for Vegetarians: Preparing at Home
Pancakes: a food that
we have eaten a lot. Still, I tell you what a pancake is: fermented and stuffed
round bread, garnished with sauce & cream. Easy to cook, pancakes exist in
world in different forms and are called by different names. Pfannkuchen, Breton
Galette, Pikelet, Kaiserschmarrn, and Johnycake are its brothers and cousins.
Many of the foodies call it Crepes too. There is nothing like a homemade
pancake. For vegetarians, there are several veg. pancake recipes that can be
tried. In this lens, I thought of penning down about a vegetarian, healthy
pancake recipe; it is actually the Chinese version and prepared without eggs.
2 cups all-purpose flour
Olive oil to fry
Half a bowl of chopped scallions/green onions
A bowl of water
A tablespoonful of dipping sauce/soy sauce
Salt to taste
In a bowl big enough, place all-purpose flour.
In a jar, take some lukewarm water and start pouring slowly
over the flour.
Start kneading by collecting it into a mass. To make a
smooth pancake batter, add 2 spoons of olive oil.
Knead until the flour becomes pliable.
After kneading for sometime in bowl, place the mass onto a
flat surface and knead more.
Make sure that the surface has already some dry flour
sprinkled over it. If you don%u2019t like kneading at all, use food-processor
for moulding.
Keep the dough aside for an hour. This will ferment it.
Take some dough and roll it in the shape of a ball.
Sprinkle some dry flour over a flat surface and start
rolling down this ball with a rolling pin.
Roll down to make a circle of about 4.5 inch.
Start rolling it from one end, so that the resulting shape
is that of a cylinder.
Hold an edge of this cylinder and make a coil shape out of
it.
Roll down again this spiral by a rolling pin and spread to
form a circle of 7-8 inch diameter.
Chop scallions neatly and place it in the middle of the
rolled disc.
Also pour half a spoon oil over it.
Pick the circle from one and repeat the last few steps: form
a cylinder (taking care that scallions do not come out).
Make a spiral and roll down for the final time. Keep the
diameter of the rolled pancake up to 8 inches.
Heat oil in a skillet.
Place the pancake circle into it. Fry for 3-4 minutes.
Cook well from both sides. A golden brown colour shall
indicate that you are done with frying.
Fry other pancakes this way.
Now, cut the fried circular pancake into quadrilateral
shapes.
Relish savoury pancake with soy sauce.
